Layered Southwest Salad

In the dead of the hottest part of summer, it’s time to serve nice cool salads.  This is a very simple layered salad that makes a great refreshingly cool meal.  It also works really well going to a pot-luck gathering.  Easy, cool and loaded with flavor.  Just what you’d expect from Food~Flavor~Fun.  Give it a try!

Layered Southwest Salad

Ingredients:

  • 6 cups lettuce, shredded
  • 3 cups rotisserie chicken, shredded
  • 2 cups tomatoes, chopped
  • 2 cups canned black beans, drained and rinsed
  • 1 cup red onion, sliced and seperated into rings
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1/2 cup salsa
  • 1 tablespoon cilantro, finely chopped
  • 2 cups sharp cheddar cheese, grated
  • 2 slices bacon, optional

Directions:

Layer the salad ingredients in a 2 quart serving bowl in this order:  lettuce, chicken, tomatoes, black beans, and onions.

In a spereate bowl, mix the mayonnaise, sour cream, salsa and cilantro.  Spread the dressing over the onions, sealing to the  bowl edge.  Top with grated cheese and cover.  Refrigerate several hours or overnight.  Garnish with crispy cooked bacon, crumbled and additional cheese, if desired.  Serves about 8.

I just got back from the mountains of northern New Mexico where we fished for trout.  We caught a bunch of really beautiful rainbow trout.  This week I’ll share a very easy way to prepare fresh trout.  Easy and as you would expect…loaded with flavor.  Trout is a very light tasting fish.  And when fresh, does not have a heavy fishy taste to it.  As such, keep the flavors light so you get the rich taste of the trout.  Give this one a shot.  It’s a winner!

Lemon-Rosemary Grilled Rainbow Trout

Ingredients:

  • 2 (2 pound) rainbow trout, cleaned with skin on, (heads on optional)
  • salt
  • fresh ground black pepper
  • 1 large lemon
  • 4 sprigs fresh rosemary
  • 1/2 red onion, sliced
  • olive oil

Directions:

Heat your grill to medium-high.

Season the cavity of the trout with salt and fresh ground black pepper.  That’s that wooden pepper grinder that sits on your counter.

Cut the lemon into 1/4 inch slices and place the slices into the cavity of the fish.  Place the red onion slices on top of the lemon slices and 2 sprigs of rosemary over both.  Coat the outside of the fish with a little olive oil.

Place the fish on the grill and cook for about 8 minutes.  The skin should have some nice grill marks on it.  Using either with a very wide spatula or 2 spatulas, carefully loosen and flip the fish to cook on the other side.  Not as long on this side, about 4-5 minutes.  Remove to a plate and keep warm in the oven if needed while you finish up preparing your side dishes.

Makes 2 servings.

Bacon Blue-Cheese Burgers

Time for this week’s recipe.  For the holiday, I’m sure that there will be a ton of grilling out there.  Throw some of these on the grill this weekend.  Guaranteed to be a hit.  Burgers loaded with flavor.  Fix this as is or as another option, make them blackened style.  Either way, give it a try.

Bacon Blue Cheese Burger

Ingredients:

  • 8 slices hickory smoked bacon
  • 1/2 cup crumbled blue cheese
  • 1 pound ground sirloin
  • 4 toasted onion rolls
  • condiments of choice
  • baby field greens or other greens, if desired

Directions:

Pan fry or microwave the bacon until crisp.  Drain on paper towels.  Coarsely chop and set aside.

Crumble the beef in a bowl and the cheese and the bacon.  Mix well to ensure that the cheese and bacon are evenly distributed.  Divide the meat into 4 equal portions and make 3/4 inch thick patties.  Season with salt and pepper.

Place the burgers on a hot grill and cook 3 to 5 minutes on each side or until cooked to personal preference.

Serve on toasted onion rolls with condiments of choice of greens.  Makes 4 servings.
