Thai Turkey Meatballs

Looking for something new and different to do with that ground turkey?  This low-fat and very tasty appetizer is just loaded with great flavor.  The sauce over the rice noodles really takes it over the top.  A must try!

Thai Turkey Meatballs

Ingredients:

  • 6 tablespoons roasted peanut oil (divided use)
  • 1 medium sized carrot, grated
  • 1/2 a jalapeno pepper, seeded and chopped
  • 1 pound ground turkey
  • 1 bunch scallions, chopped (divided use)
  • 1 egg
  • 7 tablespoons cilantro, chopped (divided use)
  • coarse sea salt, to taste
  • 6 ounces rice noodles or substitute vermicelli
  • 1 recipe Thai sauce  (below)
  • 6 tablespoons peanuts, chopped, for garnish

Directions:

In a non-stick saute pan, warm 2 tablespoons peanut oil over medium heat.  Saute the grated carrot and jalapeno pepper until the carrot is soft, about 5 minutes.  Remove from heat and allow to cool.  Transfer to a medium-sized bowl.  Add the ground turkey, 3/4 cup of scallions, egg, 4 tablespoons of the cilantro and salt.  Mix well using your hands.  Refrigerate about 30 minutes.

Form turkey mixture into 12 meatballs.  Heat the remaining peanut oil over medium heat in a non-stick saute pan.  When the oil is hot, but not smoking, add the meatballs and cook, turning, for about 6 to 8 minutes in total or until cooked throughout.  Drain the meatballs on paper towels and cover to keep warm.

Meanwhile, prepare the rice noodles according to package directions.

To serve, divide the noodles among 4 plates.  Top with meatballs and drizzle each with about 3 tablespoons of the Thai sauce.  Garnish with peanuts, remaining cilantro and scallions.  Makes 4 servings.

Thai sauce:  In a small sauce pan, combine 1 teaspoon lime zest, 2/3 cup fresh lime juice, 3 tablespoons soy sauce, 1 teaspoon chile oil, 1 teaspoon brown sugar and 1 tablespoon chopped cilantro.  Heat to a slight simmer, stirring to dissolve the sugar.

Continuing with the summer salad theme, here’s a real easy corn salad that literally comes together in minutes.  But don’t let the simplicity fool you.  This salad is loaded with flavor.  Give it a try!

Summer Corn Salad with Chiles, Lime and Feta

Ingredients:

  • 8 cups fresh corn kernels (from 8 to 10 ears)
  • 1 cup loosely packed fresh cilantro, chopped
  • 1/2 medium red onion, chopped
  • 2 jalapenos, seeded and thinly sliced into half moons
  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons freshly squeezed lime juice (about 2 limes)
  • 1 teaspoon coarse sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup crumbled feta cheese

Directions:

In a large bowl, combine all the ingredients except the feta.  Once combined, gently fold in the feta cheese last.

Serves 6 to 8.

In the dead of the hottest part of summer, it’s time to serve nice cool salads.  This is another very simple salad that makes a great refreshingly cool meal.  It also works really well going to a pot-luck gathering.  Easy, cool and loaded with flavor.  Just what you’d expect from Food~Flavor~Fun.  Give it a try!

Marinated Flank Steak Salad

Ingredients:

  • 1/2 cup dry red wine
  • 2 cloves garlic, minced
  • 1 teaspoon coarsely ground black pepper
  • 1 pound flank steak
  • 1 small red bell pepper, cut into 1/4 inch slices
  • 1 small yellow bell pepper, cut into 1/4 inch slices
  • 1/2 pound mushrooms, sliced
  • 1 large bunch leaf lettuce, separated, rinsed and torn into bite-size pieces
  • 3/4 cup creamy Italian garlic dressing

Directions:

Combine the wine, garlic and black pepper in a shallow glass casserole dish, stirring until blended.  Add the flank steak, pepper strips and mushrooms, turning once to coat.  Cover and refrigerate for several hours or overnight, turning occasionally.

Remove the steak from the marinade, reserving the marinade.  Broil the flank steak about 4 inches from the heat source on a rack in a broiler pan coated with cooking spray for 10 to 12 minutes, or until the desired degree of doneness, turning once.  Baste frequently with the reserved marinade, setting aside about a 1/4 cup.  Add the peppers and mushrooms to the broiler pan for the last 5 minutes of cooking.  Remove the steak from the heat and allow to rest for 5 minutes.

Slice the steak thinly at a diagonal and across the grain of the meat.  Arrange the steak slices, mushrooms and peppers on a bed of lettuce.  Combine the dressing with 1/4 of reserved marinade or pan drippings in a small sauce pan.  Heat over low heat stirring until heated thoroughly.  Pour over the prepared salads.  Serves about 4.
