Green Chili and Herb Salsa

Ok, time to kick it up a notch.  This week we’ll get this medium heat salsa going.  Use the salsa to add flavor to whatever protein your putting on a plate.  It’s great with seafood, shellfish or chicken.  And did you know that the heat in those chiles may even help you burn more calories?  Another reason to add it to your dish.    The salsa is not the bad part, its those darn chips!

Green Chili and Herb Salsa

Ingredients:

  • 2 poblano pepper, cored and halved lengthwise
  • 2 jalapeno peppers, cored
  • 1/2 cup cilantro (leaves and stems)
  • 2 garlic cloves, halved
  • 1 tablespoon fresh ginger, peeled and thinly sliced
  • 2 tablespoons white vinegar
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt

Directions:

Broil the poblanos and jalapenos 4 inches from the heat until charred, 8 to 10 minutes, turning the jajapenos halfway through.  Let them cool.  Then peel and combine them with the remaining ingredients in a blender.

Puree until smooth and then transfer the sauce to a small freshly washed and dried jar.  It will keep for about 2 weeks in the fridge.  Makes about 2/3 of a cup.

It’s not too early to start thinking about Valentine’s Day gifts.  This week the first of our high quality Valentine’s baskets will be available for shipment with more coming next week.

This great tasting black bean salsa can be used as a salad or a side dish.  It goes great with fajitas or bar-b-que.  Simple and great tasting.  I love that combination.  Give it a try!

Black Bean Salsa

Ingredients:

  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/2 cup cooked fresh corn kernels
  • 2 tomatoes, cut into 1/4-inch pieces
  • 1 each red and green bell peppers, cut into 1/4-inch pieces
  • 1/2 cup chopped red onion
  • 1 jalapeno pepper, seeded and diced
  • 1/3 cup fresh lime juice
  • 1/3 cup extra-virgin olive oil
  • 1/3 cup chopped fresh coriander
  • 1 teaspoon salt
  • 1/2 teaspoon cumin
  • 1/2 teaspoon ground red chiles or 1/8 teaspoon cayenne pepper

Directions:

Combine the beans, corn, tomatoes, red pepper, green pepper, red onion and jalapeno in a bowl and mix gently.

Whisk together the lime juice, olive oil, coriander, salt, cumin and chiles in a small bowl.  Add to the bean mixture and mix gently.  Let it stand at room temperature to blend the flavors before serving or store covered in the refrigerator for 24 hours and bring to room temperature before serving.

This is a very tasty side dish.  By boiling and then sauteing the cabbage gives it an almost silky texture.  This side is a perfect match for a roasted pork loin or sausage such as a good quality bratwurst.  Give it a try!

Cabbage and Apples with Riesling and Caraway

Ingredients:

  • 1 teaspoon salt (divided use)
  • 1 medium head green or Savoy cabbage (about 3 pounds)
  • 6 tablespoons unsalted butter (divided use)
  • 1 1/2 pounds apples, such as Granny Smith or Pink Lady, peeled, cored and cut into 1/4 inch thick slices
  • 1 teaspoon sugar, more as needed
  • 1/4 cup Riesling white wine
  • 1 teaspoon caraway seeds, lightly toasted

Directions:

Bring a large pot of well salted water to a boil.  Add the cabbage, return to a boil and cook until tender, 6 to 8 minutes.  Drain well and set aside.

Melt 3 tablespoons of the butter in a 12-inch skillet over medium-high heat.  Add the apples, spreading them evenly.  Season with a generous pinch of salt, sprinkle with sugar and cook, tossing occasionally, until lightly carmelized and just tender, about 5 minutes.  The apples should still offer some resistance when pierced with a fork.

Add the wine and cook until reduced by half, about 1 1/2 minutes.  Add the remaining 3 tablespoons of butter, the cabbage and the caraway seed and continue cooking, stirring gently, until the butter has melted, 1 to 2 minutes.

Season to taste with salt and a pinch more sugar, if needed.  Serve hot or warm.  Makes about 6 to 8 servings.

Sweet Potato Muffins

To go along with that New Year’s resolution to exercise more, how about eating more healthy fare?  I found this recipe in Runner’s World magazine.  They are the lightest, fluffiest, easiest whole-grain muffins ever.  Using the sweet potatoes adds moisture and nutients, like beta-carotene

Sweet Potato Muffins

Ingredients:

  • 2 1/2 cups whole-wheat flour (preferably pastry flour)
  • 3/4 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground ginger
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup melted unsalted butter
  • 1/4 cup vegetable oil
  • 1 cup pureed or mashed cooked sweet potato
  • 1 egg, beaten
  • 1/2 cup buttermilk

Directions:

Heat the oven to 375°F. Grease 12 muffin cups or add paper liners.

Combine flour, sugar, baking powder, ginger, baking soda and salt.  In another bowl, whisk butter, oil, sweet potato, egg and buttermilk.  Fold the wet mixture into the dry until just combined.  Fill the muffin cups about 3/4 full.

Bake for 20 – 25 minutes.

Banana Nut Variation

Reduce sugar to 1/2 cup.  Replace sweet potato with 1 cup mashed, very ripe banana; add 1/2 cup chopped walnuts to the batter.

Pumpkin Coconut Variation

Replace sweet potato with 1 cup canned pumpkin; add 1/2 cup shredded coconut to the batter.
