Turkey Lettuce Wraps      turkey lettuce wraps

  • 16 Boston, bibb or butter lettuce leaves
  • 1 pound ground turkey
  • 1 large onion, chopped
  • 2 tablespoons minced garlic
  • 1 tablespoon reduced sodium soy sauce
  • 1/4 cup hoisin sauce
  • 2 tablespoons minced fresh ginger
  • 1 tablespoon rice wine vinegar
  • 2 teaspoons Asian chili pepper sauce
  • 1 can (8 ounce) sliced water chestnuts, drained, finely chopped
  • 1 bunch green onions, thinly sliced
  • 2 teaspoons sesame oil

Rinse lettuce leaves, keeping them whole.

Cook turkey in a large skillet over medium heat, stirring often to break up the meat.  Add the onion, garlic, soy sauce, hoisin sauce, ginger, vinegar, and chili sauce.  Cook until is crumbled and browned.  Add the water chestnuts and green onions.  Cook until the onion begins to wilt, about 2 minutes.  Stir in the sesame oil and remove from the heat.

Arrange the lettuce leaves on the outer edge of a platter.  Spoon the meat mixture in the center.  Allow diners to spoon meat mixture into lettuce leaves and eat like a taco.

Make your own P F Changs special sauce.  Dissolve 1 teaspoon brown sugar in 1 tablespoon of water in a small bowl.  Add 1 tablespoon soy sauce, 1 tablespoon rice vinegar, dash of ketchup, teaspoon lemon juice, and 1 teaspoon sesame oil.  Whisk to blend and refrigerate.  When ready to serve, add 1 teaspoon hot mustard and 1 teaspoon chili sauce.  Stir to blend and serve.
