 Seared Chicken with Lemon Caper Sauce      chicken lemon caper


  • 2 chicken breasts
  • 1 tablespoon seasoning mix
  • 4 tablespoons EVOO
  • 1 shallot, minced
  • 2 cloves garlic, sliced thin
  • 1 cup sliced mushrooms
  • 1 tablespoon capers
  • 1 tablespoon caper vinegar
  • 1/4 teaspoon crushed red pepper flakes
  • 1  tablespoon fresh parsley leaves
  • 1 tablespoon fresh cilantro  leaves
  • juice of 1 lemon
Rinse the chicken breasts and pat them dry.  Season well on both sides with your favorite seasoning mix.
Heat the oil in a skillet over medium heat.  Sear the chicken on both sides to a golden brown.  Remove the chicken from the pan and keep warm.  Add the shallot, garlic, mushrooms, capers, and red pepper flakes.  Cook for 2-3 minutes until the shallot is translucent.  Add the caper vinegar, lemon juice, parsley and cilantro.  Cook until the leaves wilt.
Plate the chicken and pour the sauce there the top.  Serve immediately.  Makes 2 servings.
