Did you know that you can reduce your allergic reaction to local pollens by consuming local raw honey?  Find a local bee keeper in your area and ask about getting raw honey from them.  You want honey from your area because it will be made from the plants in your area.  By consuming small amounts of local honey, you increase your tolerance of the local pollens and reducing your allergic reaction.

This is just a great way to fix a great Sunday style meal.  A whole roasted chicken will feed a family and probably have some great leftovers to go over a salad or make some terrific sandwiches.  Save this one.  You will want to use it over and over.

Roasted Chicken With Thyme and Garlic

Ingredients:

Roasted Chicken with Garlic and Thyme

  • 1 whole chicken
  • 3 – 4 whole heads of garlic
  • several sprigs of fresh thyme
  • salt and pepper
  • 2 – 4 tbsp olive oil

Instructions:

Preheat the oven to 350°F.

  1. Remove the gibblets from the inside of the chicken (if there are any) then rinse and dry the bird.
  2. Break the heads of garlic.  Crush the cloves and peel the paper skin off.  Yes, it looks like a lot of garlic.  Trust me.
  3. Slide the 1/2 the cloves from one head under the skin of the chicken making pockets with your fingers.  Put the rest of the cloves from that head of garlic in the bottom of a roasting pan.  Put the rest of the cloves inside the chicken cavity.
  4. Pull the thyme leaves off most of the sprigs, leaving a few complete sprigs.  Crush them with your fingers to release the oils.  Stuff some inside the chicken and sprinkle the rest over the chicken.  Toss the whole sprigs into the chicken cavity or on top of the chicken.
  5. Season the bird with salt and pepper to your liking.  If you have a favorite seasoning mix, you can add some of that too.  I use lots of pepper especially on top where the skin will get crispy.  YUM!
  6. Pour the oil over the chicken and cover.
  7. Cook in the oven for 1 1/2 hours.  If you would like the skin to be crispy (I highly recommend it!) simply take off the cover and let it cook for another 30 minutes or so.  Keep an eye on it so that it doesn’t burn!
  8. Remove the roaster pan from the oven.  Discard the whole sprigs of thyme.  Put the chicken on a platter.  Scoop out the garlic and drippings.  Put the drippings and garlic in a pan over low heat.  Mash the garlic with a fork and add a little flour to thicken the sauce.

I usually serve this with mashed potatoes and some fresh steamed veggies.  Serves 4 to 6.

I’m not much of a breakfast eater, but this one even makes me take note.  So warm and yummy!  You are going to have a new favorite!

Cinnamon Maple Crunch Oatmeal

Ingredients:

Soak Your Oats!

  • 1 cup Rolled Oats
  • 1 tbsp Rolled Rye Flakes
  • 1 tsp apple cider vinegar (or fresh-squeezed lemon juice)
  • warm filtered water

Cinnamon Maple Crunch Topping

  • 1 tbsp butter (or coconut oil)
  • 1 tbsp sugar (or coconut sugar)
  • 1/3 cup crispy pecan pieces
  • 1/4 tsp ground cinnamon
  • Pure dark maple syrup for drizzling on top
  • Raw milk, nut milk or coconut milk, also for drizzling

Instructions:

Step One: Soaking Your Oats!

  1. Place the “Soak Your Oats” ingredients into a ceramic (or glass) mixing bowl or jar.
  2. Add enough warm filtered water to completely cover the mixture by an inch or two. Mix well to combine.
  3. Cover and place it in a warm area of your kitchen for 12-24 hours.

Step Two: Making Cinnamon Maple Crunch Oatmeal

  1. Once soaking time is completed, drain oat mixture in a fine-mesh strainer and thoroughly rinse. Set drained oats aside, while you prepare the pecan topping.
  2. In a saucepan over medium-low heat, melt butter. Add sugar, stirring well to combine. (If you prefer, you can use pure maple syrup in place of the sugar.) Add pecans and cinnamon; toss to well coat the nuts and continue to cook for about a minute, just until the mixture begins to dry a bit. Turn off heat, place candied nuts in a small serving dish.
  3. In the same saucepan you used for the nuts, add 1 1/4 cups of filtered water and return pan to medium heat. Then, add the drained and rinsed soaked oats and bring them to a gentle simmer. Cook, stirring occasionally, for about 3-5 minutes until desired consistency is reached.
  4. Divide oatmeal evenly among 2-3 bowls. Top with candied pecans, a big ole splash of milk and drizzle of pure maple syrup.

A blast from the past, Toad-n-the-Hole is quick, easy, fun, healthy and delicious! Just follow the step-by-step instructions with photos below. You can make Toad-n-the-Hole using the bread of your choice, whether it’s homemade sourdough, sprouted grain or grain/gluten free.

Ingredients:

  • slices of bread of your choice
  • butter
  • eggs
  • salt and pepper
  • fresh fruit (optional)

 

 

 

Directions:

STEP ONE: Butter a slice of bread and cut out a fun shape in the middle using whatever cookie cutter you have on hand. (No cookie cutters? Simply use a glass to cut out a circle in the center.)

STEP TWO: Heat a skillet over medium heat. When hot, butter the skillet and add the bread slice butter-side facing up. Also add the cut-out shape butter-side facing up.

STEP THREE: Crack an egg in a small bowl and then carefully pour it into the center of the cut-out as shown. Add sea salt and freshly ground pepper, if desired.

STEP FOUR: When egg white becomes opaque, gently flip the Toad-n-the-Hole over. (Remember to flip over your cut-out shape as well.)
