Cranberry Muffins

Hello All!  And welcome back to Food ~ Flavor ~ Fun!

Today I’m going to share a muffin recipe that’s a little different.  It makes a nice change from Blueberry Muffins.  These are Cranberry Muffins.  Great color and great flavor.  Throw a batch of these in the oven and just wait for the others in your house to come with their noses leading them to the kitchen.  I like these for a breakfast or as part of a larger brunch service.  Give them a try!

Cranberry Muffins

Ingredients:

  • 2 cups flour
  • 2 eggs, slightly beaten
  • ½ cup sugar
  • 3 tablespoons butter, melted
  • 1 tablespoon baking powder
  • ½ cup walnuts, chopped
  • ½ teaspoon salt
  • 1 ¼ cup fresh or frozen cranberries
  • 2/3 cup orange juice
  • 2 teaspoons grated orange rind

Directions:

Preheat oven to 400°F.

Place paper cupcake liners in muffin tins; set aside.

Sift the dry ingredients into a mixing bowl.  Make a well in the center of the dry mixture.

In a separate bowl, combine the orange juice, eggs, and melted butter.  Pour the liquid mixture into the well of the dry mixture.  Stir until dry ingredients are just moistened.  Batter may be a little lumpy.  Do not over-mix or texture will be tough.  Fold in remaining ingredients.

Fill each cupcake liner 2/3 full.  Bake for 20 to 25 minutes in the upper third of the oven, until golden brown.  Place muffins tin on a rack to cool.  After 5 minutes, remove muffins from tin and continue cooling on rack.

May be served warm or room temperature.  Freeze well.  Makes about 16 muffins.  Enjoy!
