Some of my favorite recipes are those that are handed down or shared from friends and family.  This is one worth sharing.  Pretty Simple…Pretty Basic…But, Oh So Good!

Notes:

If you don’t have self-rising flour, substitute 2 cups all-purpose flour mixed with 3 teaspoons baking powder and 1 teaspoon salt.

If you do use self-rising flour, be sure that it has not expired.  The date is printed on the bag.  The same goes for your baking powder.  Old baking powder or self-rising flour will make your biscuits doughy little slabs.  Review those dates!

The recipe is best with regular sour cream.  If you use the reduced-fat, the texture will be softer.

Incredible Cheese Biscuits

Ingredients:

  • 2 cups (about 8 ounces) shredded sharp cheddar cheese
  • 1 cup butter, melted
  • 1 cup sour cream (see note above)
  • 2 cups self-rising flour (see note above)

Directions:

Preheat the oven to 425°F.

Mix all the ingredients together and spoon into mini-muffin pans a table spoon at a time.  Bake for 10 minutes or until biscuits are golden brown.  Remove from the oven and cool on racks for 5 minutes.

Can be prepared ahead and frozen for up to a month.  Thaw frozen biscuits on the counter and reheat wrapped in foil for 10 minutes or until warmed through. if desired.  They are great at room temperature too!  Makes about 3 dozen.
