Sausage Egg and Cheese Hash Brown Cupsegg hash brown cups


  • 1½ cup frozen hash browns
  • ½ cup onion, diced
  • ½ cup cooked breakfast sausage crumbles
  • ½ cup sharp cheddar cheese, shredded
  • 12 eggs, beaten
  • 1 to 2 teaspoons salt
  • ½ to 1 teaspoon pepper


  1. Preheat oven to 425 degrees.
  2. Spray a 12 cup muffin tin with cooking spray.
  3. Place 2 tablespoons of hash browns into each cup and spray generously with more cooking spray.
  4. Place in the oven for 10 minutes and then remove
  5. Using a cup that fits into the muffin tin, press the hash browns down.  They will flatten and spread up the sides.
  6. Place back in the oven for another 10 minutes.
  7. Beat the 12 eggs in a medium mixing bowl until they start to turn fluffy.
  8. Add salt and pepper and whisk some more.
  9. Remove the hash browns from the oven and place a layer of onion in each then a layer of sausage and a layer of cheese.
  10. Pour the egg over the top to cover ingredients.
  11. Place back in the oven and cook another 15 minutes or until egg is set.
  12. Remove from oven and allow to cool slightly for 1-2 minutes.
  13. Run a knife around the edge of each cup and scoop out
