A friend of mine asked me about an easy tasty way to cook and serve salmon.  This post is the result.  It’s so easy to do and the flavor is terrific.  I use a cedar plank kit that I find at my local grocery store.  I’m not affiliated with them at all, but the kit works great.  The seasoning provided adds great flavor.  One warning, just don’t overdo the seasoning.  Fish does not need much help.  Give this one a try.  Your going to love it.  Oh, and if you want to kick it up?  Make this Lemon Butter Tarragon Sauce to go over the top when served.

Amazing Taste Cedar Plank Kit

Ingredients:

  • 2 large skin-on thick salmon fillets
  • 1 or 2 new clean cedar planks (shingles)
  • 2 – 3 tablespo0ns olive oil
  • 2 teaspoons favorite seasoning mix (I used Amazing Taste’s Malibu Seasoning)

Directions:

Soak the cedar planks in water for at least 30 minutes.  Weight them down so they stay under the water.

Preheat the grill to medium-high heat.  I use charcoal and wood, but gas works too.  My preference.

Rinse the salmon fillets and pat dry.  Sprinkle a teaspoon of seasoning on each fillet on the no-skin side.  Coat both sides of the fillet with some good quality EVOO.

Place the planks over direct heat for about 5 – 10 minutes.  Flip the planks over and place the fillets skin-side down on the planks.  Close the lid of the grill and continue to cook for another 10-15 minutes.  The meat should flake when it’s done.  Remove the planks from the grill and take them inside.  Slide them off the planks and onto your plates for serving.
