Grilled Chicken with Peach and Pepper Salsa

Grilled Chicken w Peach and Pepper Salsa


  • 2 peaches, pitted and diced (canned is ok)
  • 2 tablespoons green bell pepper, diced
  • 2 tablespoons red bell pepper, diced
  • 2 chopped scallions
  • 1 tablespoon olive oil
  • juice of 1 lime
  • 1 teaspoon fresh ginger, peeled and grated
  • 1/2 teaspoon ground cumin
  • 3/4 teaspoon salt (divided use)
  • 1/2 teaspoon fresh ground black pepper (divided use)
  • 4 (6 ounce) boneless chicken breast halves
  • 1/4 cup olive oil
  • 1/4 cup golden Worcestershire sauce


Mix together the peaches, bell pepper, scallion Tbs of olive oil, lime juice, ginger and cumin in a medium bowl.  Season with 1/2 teaspoon of salt and 1/4 teaspoon of pepper and mix well.

Brush the chicken with the olive oil and golden Worcestershire sauce, then sprinkle with the remaining salt and pepper.  Grill the chicken until cooked through, about 7 to 8 minutes per side over a grill heated to medium-high.

Serve the chicken topped with the salsa.  Makes about 4 servings.
