Grilled Salmon with Lemon Butter Tarragon Sauce

Today I’m going to share a main course that I one of my wife’s favorites.  Not my daughters’, she’s anti-fish, anti-seafood.   Anyway, this one is real easy.  And with a french touch, it’s all in the sauce baby.  When preparing most seafood, there is little need for heavy seasoning.  You want the taste of the seafood to be what carries the meal.  This one is no different.  The sauce is light, but full of great flavor and helps bring out the richness of a great piece of salmon.  Choose a nice, thick filet.  Ask to smell it befire you purchase.  Fresh fish does not smell too fishy.  The best way to great flavor is to start with good ingredients.  All of the ingredients listed should be fresh…no dried from a bottle.  Start the sauce before the fish.  The sauce takes longer to cook and it just needs to be kept warm after it’s done.  So here we go….

Grilled Salmon with Lemon Butter Tarragon Sauce



  • 4 – 6 (8 ounce) Salmon fillets
  • 2-3 tablespoons olive oil
  • salt
  • freshly ground black pepper


Preheat oven to 375°F.  Preheat a grill to high heat.

 Season the fish with olive oil, and salt and pepper.  Grill on both sides until the fish has clear grill marks, about 6 mins per side.  Remove from the grill, place on a sheet pan, and finish in the oven.

Lemon Butter Tarragon Sauce


  • 2 shallots, minced
  • 1 tablespoon unsalted butter, plus ½ cup cold unsalted butter
  • ¼ cup chardonnay
  • 2 tablespoons chicken stock
  • 1 tablespoon white wine vinegar
  •  juice of 1 lemon
  • ¼ cup heavy cream
  • ½ cup packed chopped tarragon
  • 2 tablespoons packed chopped parsley
  • Salt and freshly ground pepper


In a small pan, over medium heat, sweat the shallots in 1 tablespoon of the butter.  Add the wine stock, vinegar, and lemon juice.  Reduce the heat and simmer until reduced by half.

 Stir in 3 tablespoons cream.  Add half of the tarragon.  Whisk in the cold butter, 1 tablespoon at a time, strain.  Yo will have a nice creamy sauce.  Add the remaining tarragon and chopped parsley.  Season with salt and pepper to taste.

Plate your grilled salmon and pour a bit of the sauce over the top.  Enjoy!
