Orange Chicken

Last post was a great Japanese Fried Rice recipe.  I paired that up with this post:  Orange Chicken.  This is a low calorie, low fat version of Orange Chicken.  If you like things light with a lot of flavor, give this one a try.  And serve it with the Fried Rice.  It will make one heck of a great meal.  Give this one a try!

Orange Chicken

Ingredients:
  • 1 medium orange
  • 1 teaspoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried rosemary, crumbled
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon black pepper
  • 6 skinless, boneless chicken thighs, trimmed of visible fat

Directions:

Preheat oven to 350°.
Peel off the zest with a zester or vegetable peeler, making sure to avoid the bitter white pith underneath.  Mince the zest.  Trim off the remaining orange rind with a knife, cut into 8 wedges.
Stir the orange zest, oil, paprika, rosemary, garlic salt and pepper in a small bowl.  Rub the orange mixture all over the chicken.  Transfer to a roasting pan and scatter the orange wedges around the chicken pieces.
Roast until the juices run clear, about 45 minutes.  Cover loosely with foil and let stand for 5 minutes before serving.
