Here’s a great recipe to get you through those Friday’s in Lent when you’re looking for a meatless light meal.  Great flavor.  Be sure to have a little hot sauce to sprinkle to add just a little more kick.

Sake-Ginger Grilled Shrimp Wraps


  • 1/4 cup sake
  • juice of 3 limes
  • 1 tablespoon Asian fish sauce
  • 3 tablespoons sugar
  • 2 tablespoons minced green onion (both white and green parts)
  • 1 (2-inch) piece fresh ginger, minced
  • 1/2 teaspoon salt
  • 1 teaspoon dried red pepper flakes
  • 1/4 cup vegetable oil
  • 1 pound shrimp, peeled and deveined
  • Red leaf lettuce
  • hot sauce
  • bamboo skewers


In a bowl, combine the sake, lime juice, fish sauce, sugar, green onion, ginger, salt and red pepper flakes and whisk together with a fork to combine.  Add the oil and whisk that in to complete the marinade.

Place the shrimp in a medium bowl and pour the marinade over the shrimp.  Stir to coat well, cover and refrigerate for at least 30 minutes.  At the same time, soak the bamboo skewers in water for the same 30 minutes.

Prepare a gas or charcoal grill for cooking over high heat.  Place the shrimp on the skewers (about 5-6 shrimp on each) and grill until lightly browned on both sides, 5 minutes per side.

Serve the shrimp wrapped in lettuce leaves with hot sauce for sprinkling.  Makes 6 servings.
