Had a really great day yesterday.  I took part in a fund raising event benefiting the American Cancer Society and Race for the Cure.  A big thank you to my friends at BridgeWork Partners to allow me to share in a great day.  I donated a couple of gift baskets for their Silent Auction and a dinner for 4 people where I will come to their home and prepare a 5 course meal.  It’s going to be a party.  Great food!  I brought along 3 different caviars a duck foie gras and a country pork pate’ for folks to try.  I met a lot of new people, shared my love for great tasting food, and made some money for a very worthy cause.  I can’t wait to find out how much the event raised.

Ok, on with today’s post.  I felt like some Shrimp today.  This little scampi recipe is loaded with flavor.  Be sure to get some fairly large shrimp for this recipe.  Clean and devein the shrimp.  There’s nothing worse that having that crunchy sensation when enjoying some really pretty shrimp.  Take a sharp knife and cut along the back of the peeled shrimp.  Under running water, rinse out the vein from the channel you’ve cut and set aside.   This is a very quick meal to fix.  Start your pasta first and have your ingredients at hand.  This takes just a few minutes.  And oh, it’s so good.

Shrimp Scampi


  • 1 pound of large shrimp (16-20 count per pound), peeled and deveined
  • 2 teaspoons of your favorite seasoning mix
  • 2 teaspoons olive oil
  • 1/4 cup unsalted butter
  • 1 1/2 tablespoons minced garlic
  • 1 tablespoon capers, crushed
  • 1/2 cup dry white wine
  • 1/4 cup fresh lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/2 pound cooked linguini
  • 3 to 4 tablespoons chopped fresh parsley


Toss the shrimp in a bowl with the seasoning mixture.

Place the olive oil and 2 tablespoons of butter in a large skillet over high heat.  Add the shrimp and spread them out evenly in the skillet.  Coof for 2 minutes and quickly turn the shrimp.  Add the garlic and capers to the pan and cook for 30 seconds.  Add the wine, lemon juice and remaining 2 tablespoons of butter to the skillet and cook for 1 to 2 minutes.  Season the shrimp with salt and pepper.  Add the cooked pasta to the skillet, tossing to coat well.  Remove the skillet from the heat and stir in the parsley.  Serve hot.  makes about 4 servings.
