Mo Better Biscuits    Mo Better Biscuits

Ingredients:

  • 2 cups Bisquik
  • 1/2 cup sour cream
  • 1/2 cup Sprite
  • 3 tablespoons unsalted butter

Directions:

  1. Preheat oven to 400°F.
  2. In a mixing bowl, combine Bisquik, sour cream and Sprite.  It will create a fairly loose dough.
  3. Pat the dough out on a floured surface and cut your biscuits out.
  4. Melt 2 tablespoons of the butter in a glass 9 x 13” baking pan in the oven.
  5. Place biscuits into the pan on top of the butter.
  6. Bake for 12 to 15 minutes, until golden brown.
  7. Remove from the oven and top with the remaining butter

Makes about 8 to 12 biscuits, depends on how big you like them!

Greek Style Shrimp Scampi    greek shrimp scampi

Ingredients:

  • 6 ounces uncooked angel hair pasta
  • 1 teaspoon extra virgin olive oil
  • 2 teaspoons minced garlic
  • 1 pound peeled and deveined medium shrimp
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1 teaspoon rosemary
  • 1/2 teaspoon salt
  • 1 10.5 oz. can or grape tomatoes, halved
  • 1/2 cup kalamata olives, chopped
  • 4 oz. crumbled feta cheese

Directions:

  1. Cook pasta according to the package instructions.
  2. Heat oil in a large non-stick skillet over medium-high heat.  Add garlic to pan; saute’ for 1 minute.  Add shrimp to the pan and stir in thyme, oregano, rosemary and salt.  Stir to coat.  Cook shrimp for 2 minutes.
  3. Add halved grape tomatoes and cook an additional minute or until shrimp are done and the tomatoes are softened. 
  4. Remove from the heat, toss together the pasta and the shrimp.  Top with feta and olives.

Makes about 4 servings.

Classic Saffron Rice    Classic Saffron Rice

Ingredients:

  • 1 cup basmati rice
  • 2 cups chicken stock
  • 1 tablespoon butter (optional)
  • 1 tablespoon dried onion flakes
  • 1/2 teaspoon salt
  • pinch of saffron, crumbled

Directions:

  1. Rinse the rice well and drain.
  2. In a medium sauce pan, add the rinsed rice and the remaining ingredients.
  3. Bring to a boil, then cover and reduce the heat.
  4. Simmer for 15 to 20 minutes until the stock is absorbed and the rice is tender.
  5. Remove from the heat, fluff with a fork and serve.

Sausage Egg and Cheese Hash Brown Cupsegg hash brown cups

Ingredients:

  • 1½ cup frozen hash browns
  • ½ cup onion, diced
  • ½ cup cooked breakfast sausage crumbles
  • ½ cup sharp cheddar cheese, shredded
  • 12 eggs, beaten
  • 1 to 2 teaspoons salt
  • ½ to 1 teaspoon pepper

Directions:

  1. Preheat oven to 425 degrees.
  2. Spray a 12 cup muffin tin with cooking spray.
  3. Place 2 tablespoons of hash browns into each cup and spray generously with more cooking spray.
  4. Place in the oven for 10 minutes and then remove
  5. Using a cup that fits into the muffin tin, press the hash browns down.  They will flatten and spread up the sides.
  6. Place back in the oven for another 10 minutes.
  7. Beat the 12 eggs in a medium mixing bowl until they start to turn fluffy.
  8. Add salt and pepper and whisk some more.
  9. Remove the hash browns from the oven and place a layer of onion in each then a layer of sausage and a layer of cheese.
  10. Pour the egg over the top to cover ingredients.
  11. Place back in the oven and cook another 15 minutes or until egg is set.
  12. Remove from oven and allow to cool slightly for 1-2 minutes.
  13. Run a knife around the edge of each cup and scoop out

Enjoy!

 Ultimate Cinnamon RollsUltimate Cinnamon Rolls

Ingredients: 

For the dough:

  •  3/4 cup warm water
  • 2 and 1/4 teaspoons active dry yeast
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/4 cup buttermilk, room temperature
  • 1 egg
  • 1/3 cup oil
  • 4 and 1/2 – 5 cups all-purpose flour

For the filling:

  • 1 and 1/4 cups light brown sugar
  • 2 and 1/2 tablespoons ground cinnamon
  • 2 tablespoons cornstarch
  • 1/2 cup (8 tablespoons) unsalted butter, room temperature

For the cream cheese frosting:

  • 2 oz. cream cheese, room temperature
  • 1/4 cup (4 tablespoons) unsalted butter, room temperature
  • pinch of vanilla powder ( or 1 teaspoon vanilla extract)
  • 1 teaspoon fresh lemon juice
  • 1 and 1/4 cups powdered sugar, sifted

Directions:

In the bowl of a stand mixer fitted with a dough hook, add water, yeast, and 1 tablespoon of the granulated sugar. Stir together, then let the yeast rise for about 5-10 minutes. In a small bowl, whisk together buttermilk, egg, and oil until well-combined. After 10 minutes, the yeast should look frothy and bubbly. At this point, pour in the buttermilk mixture, remaining sugar, and salt, and stir together for 10-15 seconds.

Pour in 2 cups of the measured flour, and stir on low speed until incorporated. Continue to pour in flour, 1/4 cup at a time, until the dough pulls away from the bowl and bowl starts to look clean. Increase speed to medium and knead for 5 minutes. The dough should be slightly sticky, but not sticky enough to stick to your fingers when touched.Transfer dough to a greased bowl, cover with plastic wrap, then set aside in a warm place to rise for 1-2 hours, or until dough has doubled in size.Meanwhile, prepare the filling. In a small bowl, mix together brown sugar, cinnamon, and cornstarch until combined.Butter an 11 x 15 inch glass baking dish, then line with parchment paper, and butter again.Once dough has risen, liberally flour a large, clean work surface. Punch down the dough to remove air bubbles, then transfer it to the work surface. Roll the dough out into a large rectangle, roughly 20×30 inches wide. Spread softened butter over the surface of the dough, leaving a 1-inch strip on the edge of the dough farthest from you untouched. Evenly sprinkle cinnamon sugar mixture over the butter, then use a rolling pin to gently roll over the mixture and slightly press it into the butter.

Starting with the edge of the dough closest to you, gently roll up the dough into a tight log, sealing it with the strip of dough you left untouched. Cut off any uneven ends. Score dough every two inches, then use those marks to evenly slice your dough into rolls.

Place rolls into parchment paper lined baking dish. Cover with plastic wrap, then set aside in a warm place to rise 1-2 hours, or until rolls have doubled in size and are almost touching each other. Bake in preheated 350 degree oven for 15-17 minutes, or until tops start to brown. Do not over bake!

While rolls are baking, prepare your frosting. In a bowl, using an electric hand mixer, beat together butter and cream cheese until smooth and creamy. Add vanilla and lemon juice and beat until combined. Pour in powdered sugar and mix on low speed just until incorporated. Then, increase speed to high and beat for an additional 5 minutes, or until frosting turns white.

Once you remove the rolls from the oven, spread half of the frosting on top of them. This layer will melt into the rolls. Once they’ve cooled down, spread on the remaining frosting. Serve warm or reheat before serving.

 Grilled Fish Provencal  Grilled Fish Provencal

Ingredients:

  • 2 teaspoons finely grated lemon zest
  • 1 teaspoons dried Italian herb seasoning
  • Pinch of red-pepper flakes
  • 1/2 teaspoon sea salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/8 teaspoon garlic powder
  • 1 small sweet onion, thinly sliced
  • 6 small zucchini, thinly sliced
  • 4 wild-caught white fish fillets (6oz each)
  • 10oz organic sweet grape or cherry tomatoes, halved
  • 4 tablespoons extra-virgin olive oil

Directions:

  1. Heat grill to medium. In a small bowl, add lemon zest, Italian seasoning, red-pepper flakes, salt pepper and garlic powder. Toss well to combine; set aside.
  2. If using fresh fish, pat dry and set aside. If using frozen fish, place fish fillets on a clean kitchen towel (or paper towels) and cover with another clean kitchen towel (or paper towels) and gently press to remove any excess water; set aside.
  3. Place side-by-side on kitchen counter, four 14-inch squares of heavy-duty aluminum foil. Leaving a two-inch border around the foil, divide the sliced onion and zucchini evenly among the four sheets of foil. Season veggies with salt and pepper. Top veggies with the fish fillets. Sprinkle fish generously with the spice mixture. Then, top each fillet with a handful of tomato halves and one tablespoon of olive oil. Fold foil over ingredients, crimping the edges to form a sealed pouch, as shown in photos below.
  4. Place packets on grill. Cover and grill until fish is just cooked through (about 10-12 minutes). Remove packets from grill. Open carefully, as the packets will release some steam, and transfer to serving plates.

 Pulled Pork Enchiladas  Pulled Pork Enchiladas

Ingredients:

  • 2 cups (packed) Pork Carnitas (Mexican Pulled Pork) or other shredded meat
  • 1 tbsp olive oil
  • 1 cup tinned black beans or red kidney beans, drained
  • 1 can (15oz / 400g) corn kernels, drained
  • 2 cups shredded cheese (any good melting cheese)
  • 8 tortillas
  • 3 cups (750ml/25oz) Enchilada Sauce

Directions:

  1. Preheat oven to 300F/180C.
  2. Heat 1 tbsp olive oil in a pan over high heat. Add the pork carnitas and cook until the bottom is nicely browned – about 1½ minutes. Do not turn, just make the bottom crispy (to keep the pulled pork as moist as possible), then remove the pulled pork into a bowl. It does not matter if the top isn’t heated through, it will heat in the oven.
  3. Add the corn, black beans, ½ cup enchilada sauce and ½ cup cheese into the bowl and mix to combine.
  4. Spread ½ cup of Enchilada Sauce on the bottom of the baking dish.
  5. Place ½ packed cup of filling (from step 3) into a tortilla and roll up and place in the baking dish.
  6. Pour over the remaining Enchilada Sauce, and bake for 10 minutes.
  7. Remove from oven and scatter the cheese on, then bake for a further 10 to 15 minutes until the cheese is bubbling and golden.
  8. Let stand for 5 minutes before serving.

BBQ Chicken Sandwiches   BBQ Chicken Sandwich

Ingredients:

  • 1/2 cup ketchup

  • 2 tablespoons honey mustard
  • 2 tablespoons water
  • 3/4 teaspoon ancho chile powder
  • 3/4 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon Worcestershire sauce
  • 1/8 teaspoon kosher salt
  • 3 cups shredded skinless, boneless rotisserie chicken
  • 3 tablespoons mayonnaise
  • 2 tablespoons cider vinegar
  • 1 teaspoon sugar
  • 3 cups packaged coleslaw
  • 1/3 cup chopped green onions
  • 6 (1 1/2-ounce) hamburger buns, toasted

Directions:

  1. Combine first 10 ingredients in a saucepan. Bring to a simmer; cook 10 minutes. Combine sauce and chicken.

  2. Combine mayonnaise, vinegar, and sugar. Add coleslaw and onions; toss.
  3. Place about 1/2 cup chicken mixture on bottom half of each bun. Top each serving with about 1/2 cup coleslaw mixture; top with top half of bun
  4. Enjoy!

Sausage Egg and Cheese Casserole   Sausage Egg and Cheese

Ingredients:

  • 1 pound Jimmy Dean Premium Pork Sausage
  • 6 eggs
  •  2 cups milk
  •  1 teaspoon salt
  •  1 teaspoon ground mustard
  •  6 slices of bread, cut into 2″ pieces
  •  1 cup shredded cheddar cheese

Directions:

  • In a skillet, brown and crumble sausage; drain and set aside. In a large bowl, beat eggs; add milk, salt and mustard. Stir in bread cubes, cheese and sausage.

  • Pour into a greased 11-in. x 7-in. baking dish. Cover and refrigerate for 8 hours or overnight. Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 40 minutes or until a knife inserted near the center comes out clean.

    Yield: 8-10 servings.  Enjoy!

Zucchini-Feta Pasta (GF Option)  Zucchini-Feta Pasta

Ingredients:

  • 1 pound of your favorite fusilli pasta
  • 2 tbsp olive oil
  •  2 cloves garlic, minced
  •  1/3 cup yellow onion, finely diced
  •  2 medium organic zucchini, diced
  •  14 oz diced organic tomatoes with Italian herbs
  •  1/2 tsp sea salt
  •  1/8 tsp freshly ground black pepper
  •  1 tbsp fresh organic Italian parsley, minced
  •  1/2 cup crumbled feta cheese

Directions:

  1. Cook pasta according to directions. (If using brown rice pasta, be sure to thoroughly rinse in cold water once cooking time is complete and return to stockpot, set aside.)
  2.  Meanwhile, heat a large skillet over medium-high heat. Add olive oil, garlic and onion. Cook about one minute, then add the diced zucchini. Saute for about 5-6 minutes, until zucchini begins to soften.
  3.  Add tomatoes, salt and pepper. Stir and cover. Allow to simmer over low heat, until zucchini reaches desired tenderness.
  4.  Turn off heat. Mix in feta and parsley. If using brown rice pasta, pour zucchini-feta mixture over the pasta and rewarm over low heat.
  5. Season with additional salt and pepper to taste.
