Ingredients:

Directions:

In a large bowl, combine the red and green cabbage, carrots and scallions.

In a small bowl, combine the lime juice, vinegar, fish sauce and sugar.  Slowly pour in the olive oil while whisking with a fork to emulsify.

Toss the slaw with the dressing, garnish with chopped peanuts and serve.  Makes about 6 servings.
