I found this recipe recently and just had to give it a try.  This stew will definitely hit the spot.  I thought it was very good.  When I made it, I added a little additional spice with Tabasco and some oregano and thyme.  Be sure to pick up a loaf of french bread or other hearty bread to go along with this. You’ll want to soake up every drop.

Black Bean and Sausage Stew


  • 1 tablespoon olive oil
  • 1 (13 ounce) package smoked turkey sausage, cut into 1/4 inch slices
  • 2 cloves of garlic, thinly sliced
  • 1 (19 ounce) can black beans, drained
  • 1 (14.5 ounce) can chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon fresh ground black pepper


Heat the oil in a dutch oven over medium heat.  Add the sausage and cook without stirring, until browned, about 3 minutes.  Turn the sausage, add the garlic and cook for about 2 minutes more.  Add the beans, broth and tomatoes with the juices.  Increase the heat to medium-high and bring to a simmer.  Season with salt and pepper.  Spoon into bowls and serve with a hearty bread.
