This great tasting black bean salsa can be used as a salad or a side dish.  It goes great with fajitas or bar-b-que.  Simple and great tasting.  I love that combination.  Give it a try!

Black Bean Salsa


  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/2 cup cooked fresh corn kernels
  • 2 tomatoes, cut into 1/4-inch pieces
  • 1 each red and green bell peppers, cut into 1/4-inch pieces
  • 1/2 cup chopped red onion
  • 1 jalapeno pepper, seeded and diced
  • 1/3 cup fresh lime juice
  • 1/3 cup extra-virgin olive oil
  • 1/3 cup chopped fresh coriander
  • 1 teaspoon salt
  • 1/2 teaspoon cumin
  • 1/2 teaspoon ground red chiles or 1/8 teaspoon cayenne pepper


Combine the beans, corn, tomatoes, red pepper, green pepper, red onion and jalapeno in a bowl and mix gently.

Whisk together the lime juice, olive oil, coriander, salt, cumin and chiles in a small bowl.  Add to the bean mixture and mix gently.  Let it stand at room temperature to blend the flavors before serving or store covered in the refrigerator for 24 hours and bring to room temperature before serving.
