Dilled Shrimp Salad

I received this recipe in an exchange and thought I’d share it here.  I used it as a salad.  Anything with shrimp is ok by me.  Although, I’m not normally a big fan of using dill in recipes.  It’s so easy to over do it and all you’ll taste is dill.  It stirs up really quickly.  Letting the flavors go all the way through by refrigerating overnight is the best option, if you can plan ahead.  Give this one a try.

Dilled Shrimp Salad

Ingredients:

  • 1 1/2 cups mayonnaise
  • 1/3 cup lemon juice
  • 2 tablespoons dried dill
  • 1 large red onion, sliced thin
  • 1 pounds cooked, peeled shrimp
  • 1/4 cup sugar
  • 1/2 cup sour cream
  • 1/4 teaspoon salt

Directions:

In a large bowl, mix all the ingredients except for the shrimp.  Add the shrimp to the sauce and chill for at least 1 hour.  Over night is better, if possible.  To serve, place a base of yor favorite lettuce on a plate and spoon the shrimp salad in the center.  Garnish with a sprig of fresh dill. (optional)
