Spring Vegetable Stew

Hello All!  Welcome back to Food~Flavor~Fun!  You come to a great place to find and share some great food ideas that are loaded with flavor to be prepared and shared with family and friends to bring a lot of fun and enjoyment into our lives.

Today I’m going to share a fast, easy and really healthy vegetable stew.  This is a great dish when your running a little late coming home from work and the kids or spouse are all claiming that they’re starving.  You don’t have to wait for the meat to thaw.  Grab the veggies and lets get some stew on.  It’s light on calories and big on flavor.  It will definitely fill that vacant spot in your tummy too!  Give it a try.

Spring Vegetable Stew

Ingredients:

  • 1 tablespoon olive oil
  • 1 large shallot, chopped (use 2 if they are small)
  • 5 green onion, chopped (both the white and green parts)
  • 3 cloves of garlic, minced
  • 1 small bunch asparagus, cut diagonally in 1 inch pieces
  • 1 (10 oz.) package thawed frozen artichoke hearts (or canned) cut in half
  • 1 cup chicken or vegetable broth
  • 1 (14 oz.) can crushed or chopped tomatoes
  • 1 (15 oz.) can small white beans
  • 1/2 teaspoon dried tarragon (or other herbs)
  • 1/2 teaspoon salt
  • fresh ground black pepper
  • 1/2 cup grated parmesan or pecorino cheese
  • cooked brown or white rice for serving

Directions:

Heat olive oil in a dutch oven over medium heat; add the shallot and green onion.  Cook, stirring for about 5 minutes.  Add the garlic, cook for 1 minute until fragrant.  Add the asparagus, cooking and stirring another minute.  Add the artichoke hearts, broth, tomatoes, beans and tarragon.

Turn the temp down to low and simmer until the vegetables are tender, about 12 to 15 minutes.  Season to taste with salt and pepper.  Serve in bowls over rice or pasta with cheese on top.  Makes about 4 servings.  Enjoy!
