Jalapeño Hush Puppies

I’ve been away for a while. Between a business trip to Bangalore, India….a volcano….all of europe closing it’s airspace, I can honestly say that I have been around the world in the last few weeks. But I’m back and beginning to dig myself out. So it’s time to start posting more great food recipes!

Today’s is a southern classic. They say the name Hush Puppies originated from these balls of cornbread that were fried and thrown to howling puppies to make them hush. All I know for sure is that these little balls of joy are served with a wide array of dishes from fried fish and shrimp, to gumbo and red beans and rice. I really like these with the red beans and rice. Hmmm, sounds like another recipe coming soon. Here’s my version of Jalapeño Hush Puppies…

Jalapeño Hush Puppies

Ingredients:

  • 1 1/2 cups yellow cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon Cajun Chef hot sauce or the hot sauce of your choice
  • 1/4 cup minced yellow onion
  • 2 fresh jalapeños, seeded and minced
  • 2 large eggs, beaten
  • 1/2 cup milk
  • Vegetable oil for deep frying
  • salt and pepper

Directions:

Combine the cornmeal, flour, baking powder, salt, hot sauce, onion, and jalapeños in a medium sized mixing bowl and mix well. Add the eggs and milk and mix again.

Heat 4 inches of vegetable oil in a deep pot or electric fryer to 360*F. Drop in the batter a heaping tablespoon at a time, frying 6 puppies at a time. When they pop to the surface, roll them around in the oil with a slotted spoon to brown them evenly. Remove and drain on paper towels. Season with salt and pepper and serve.  Enjoy!
